Ground Turkey Recipes - Make Them Better

Burger

A beef hamburger is wonderful if prepared correctly, and creating ground turkey recipes simply by substituting ground turkey for ground beef produces a poor substitute.

If we make the ground turkey moist and flavorful we have a distinct dish which can be delicious.

Add moisture with onion, cheese (especially ricotta), sour cream, mushrooms, vegetables, moistened bread or oatmeal. Add flavor with herbs and spices especially Mexican, Cajun, and Oriental flavors.

Turkey Burger

1 pound ground turkey
1 tablespoon olive oil plus more to brush burgers
8 oz mushrooms chopped
1 medium onion finely chopped
1 tablespoon soy sauce
1/4 cup crumbled blue cheese

Sweat onion and mushroom in oil for about 5 minutes until onions are translucent - cool slightly. Mix all ingredients. Form 4 (four) patties. Brush with burgers with oil.

Cook by any of the following methods:

Grill 5 to 10 minutes per side until internal temperature is 165 F. (74 degrees celsius). REMEMBER an OVEN BROILER is an upside-down grill.

Cook in medium skillet over medium heat until internal temperature is 165 F (74 degrees celsius).

Pan-sear in skillet to brown, finish in 400 degree F.(204 degree celsius) oven with or without added sauce to internal temperature of 165 F (74 degrees celsius) and not pink inside.

Mexican

Mexican recipes work well to create ground turkey recipes partly because turkeys were indigenous to Mexico so cooking techniques have developed over a long time. Another reason is that the spices associated with Mexican cooking go very well with this low fat meat.

It is easy to make a Mexican Burger by using the above recipe with 1 medium green bell pepper finely chopped in place of the mushrooms and add 2 cloves of minced garlic to the onions.

You can also use salsa alone or mix it with corn.

Add a 1.25 oz taco seasoning (either a packet or better yet mix your own - scroll to end for recipe) and a little salsa and maybe corn to the turkey.

Make patties, dredge in breadcrumbs if you wish, and bake for 10 minutes, add salsa turn burgers and bake for another 10 minutes to an internal temperature of 165 (74 degrees celsius).

Tacos

Turkey tacos can be made with chopped pre-cooked turkey, or with ground turkey.

Ground Turkey Taco

1 pound ground turkey
1 tablespoon oil
1 medium onion chopped
1 bell pepper
1/2 cup salsa
1/4 cup water
1 packet of taco seasoning mix or use taco seasoning below

Heat oil in skillet. Add onion and bell pepper and cook over medium heat for about 3 minutes. Add the ground turkey, break up into small chunks with a wooden spoon and cook until no longer pink 5 to 7 minutes. Add the salsa water and taco seasoning and heat for 5 minutes more or until the liquid is reduced.

Use as a filling in a warmed taco shell and top with any of the following or your own ingredients: lettuce, avocado, tomato, shredded cheese, hot sauce, sour cream.

Taco Seasoning

1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano

Mix ingredients - Mix in a larger quantity and store in an air tight container.
