There are many variables which influence cooking times (click here to see some), so we highly recommend cooking with a thermometer rather than a clock. After your turkey is removed from the oven and has rested for 15 to 20 minutes the temperature should be about 74 degrees celsius. The temperature will continue to rise 3 to 5 degrees as the heat from the bones continues to raise the temperature of the meat. The following is a guide, an estimate, use your thermometer. The following charts are the best information for how long to cook a turkey. For reasons already explained the charts below give an idea as to how long it will take at various cooking methods and temperatures to get to the ideal finished temperature of the turkey. But, check the temperature up to an hour before you expect the turkey to be done. You do not want to overcook the turkey. It is a good idea to use both a probe thermometer which stays in the turkey as it cooks, and an instant read thermometer to check in several places both before and after the probe thermometer indicates the turkey is done.

We do not recommend stuffing a turkey. To see why click here. If you do decide to stuff your turkey, be sure to use a thermometer to make certain that the stuffing temperature has reached 74 degrees celsius. Because stuffed turkeys take longer to cook you may need to place aluminum foil over the breast to keep it from over-browning.

How long to cook a turkey on a grill at 177 to 205 degrees celsius:Use a 6 or 7 kilogram bird. Do not stuff the turkey. Figure about 3 hours but check it after two hours.
How long to cook a turkey if deep frying:A deep fried turkey takes about 3 to 5 minutes per 1/2 kg when cooked in 175 degree celsius oil. Check the temperature with an instant read thermometer after cooking at the 3 minute per 1/2 kg cooking time. If the temperature is 71 degrees celsius, the turkey is done and can be removed to rest. If the turkey has not reached 71 degrees celsius, return it to the oil, carefully, for more frying.
How long to cook turkey when rotisserie cooking:A 5.5 to 6.5 kg turkey may take from 4 to 5 hours - more or less time. An instant read thermometer is very important here because there are so many variables. These variables include outdoor temperature, wind, placement of meat from heat source, speed of rotisserie.\ If you cook the turkey on a rotisserie inside of a closed grill, the cooking time may be cut in half. But you will actually be "roasting" rather than rotisserie grilling.
