Monte Cristo

The Monte Cristo sandwich is based on the French Croque Monsieur, a grilled ham and cheese sandwich.The Monte Cristo substitutes poultry, chicken or turkey, for the ham. The Croque Monsieur was transformed into a Croque Madame with the addition of an egg cooked inside of the sandwich. That may relate to the fact that the Monte Cristo includes egg (by soaking the bread in egg) in many of its more recent forms.


Monte Cristo (2 sandwiches)

1 large egg

½ cup milk or heavy cream

¼ teaspoon salt

¼ teaspoon pepper

4 slices of sandwich bread

2 teaspoons Dijon mustard

3 ounces thinly sliced roasted turkey breast

3 ounces thinly sliced Swiss cheese

2 tablespoons unsalted butter

Whisk the eggs together with the cream and the salt and pepper.

Build the sandwich from the bottom up with bread, mustard, cheese, turkey, cheese, and the top slice of bread with mustard side down.

Melt butter in a skillet over medium low heat.

Dip both sides of the sandwich in the egg mixture and fry it in the buttered skillet until it is golden brown about 4 minutes, then flip and cook the other side until brown about 4 minutes more.

Sometimes this sandwich adds ham interspersed with the turkey, and it is often dusted with powdered sugar and served with a jelly or a cranberry sauce.
