Turkey Posole

Turkey Posole: Posole or Pozole means hominy so for a true posole you need to add hominy. But some people don’t seem to like the taste of hominy and in some areas hominy is hard to get. If you know you don’t like hominy or you find it difficult to obtain, corn or beans can be substituted to make a faux-posole.

Turkey Posole

2 Tbs Olive Oil

1 Medium onion finely diced

1 dried ancho chili, thinly sliced or 1 chopped jalapeno pepper, or ½ teaspoon of crushed red pepper

1 teaspoon chili powder

4 cups of turkey stock

1 28 oz can of diced tomatoes (optional)

1 8 oz can of posole (hominy) or 8 oz of corn or beans

2 cups of shredded turkey

Salt and pepper to taste

2 Tablespoons of lime juice and lime wedges

Saute the onion in the olive oil over medium heat until it just begins to brown.

Add the chili or crushed peppers, the chili powder, the turkey stock, the tomatoes (if using) and the hominy or beans or corn. Add the shredded turkey and simmer for 20 minutes. Add salt and pepper to taste. When ready to serve add the lime juice.
